Anila’s Aubergine, Peas
and Potato Curry.

Mild with a delicious fruit flavour, this quick and easy curry from market regular, Anila’s Authentic Sauces, is sure to be a favourite with kids.

INGREDIENTS
    Anila’s Fruity Mild Curry Sauce
  • 1 cup frozen green peas
  • 3  potatoes
  • 1 aubergine
  • Jar of water
  • Fresh coriander
  • 1 tomato
METHOD

Cube the potatoes and aubergine. Pour the Anila’s sauce into a pan and heat. Add the cubed vegetables and cook in the sauce for 2-3 minutes.

Add the jar of water and cook gently for up to 10 minutes. Add the frozen peas and simmer until the vegetables are tender. Garnish with fresh coriander and wedges of tomatoes and serve with chapatis or naan bread.
